Pascal farms two plots in the Premier Cru Champeaux, applying his biodynamic techniques to the vines in the cool, east-facing site on the upper reaches of the appellation. Champeaux’s vines face the morning sunlight but are shaded in the afternoon, giving the climat one of the cooler mesoclimates in this part of the Côte de Nuits. The vineyard’s soils are made up of a mix of clay and limestone. They are considerably rockier and stonier than soils in the vineyards to the south, making for good drainage and low fertility which is beneficial for high-quality viticulture.

Savoury tones of clove, star anise spice, and beef consommé are propped up by a core of ripe plum and blueberry aromatics. A medium bodied palate leads to a taut cherry acidity and a fine mineral finish with milk chocolate and fresh mint nuances. A captivating blend of dark fruits and whispers of savoury tones creates a wine that is extremely alluring and highly enjoyable.

Serve with seared beef tenderloin coated in ground ancho, fennel seeds and star anise.
